Qiao Lin Hotpot in downtown Seattle offers a hands-on hot pot dining experience that appeals especially to meat lovers and seafood fans. Located just a few blocks from the bustling city core, it feels like a spot where both groups of friends and couples can settle in for a leisurely meal, especially during the colder months when a warm, simmering broth is most inviting.

The restaurant’s main draw is its customizable 1lb hot pot bowls, which allow diners to pick from a variety of thinly sliced meats—such as Angus beef, lamb shoulder, and pork belly—and pair them with fresh vegetables and noodles. The extensive seafood options, including a seafood combo and house specialty frog legs, add another layer of variety, catering to those who enjoy a surf-and-turf style meal. The broth choices are notably balanced, offering both spicy and mild bases, so you can fine-tune your heat level without losing the broth’s depth. It’s a draw for people who enjoy sharing dishes and spending time cooking at the table.

The sauce bar is a standout feature, letting diners create highly personalized dipping sauces, which encourages a bit of adventurous mixing and matching. This element often elevates the dining experience, as assembling your own sauce is almost as integral as the hot pot itself.

Inside, the space leans towards modern with spacious booths that can accommodate groups or more private dinners. The setting manages to be lively without feeling noisy, making it suitable for casual date nights as well as small business meetups. Service tends to be attentive without being intrusive; staff are knowledgeable and helpful when it comes to navigating the menu’s many options.

Qiao Lin is best visited during off-peak hours like weekday lunches or early dinners to avoid waiting, although it can handle reservations as well. It’s the kind of place where you linger at the table, savoring the fresh ingredients and the warming broth, which makes it a particularly welcoming destination when Seattle’s weather turns grey and rainy.

Overall, this spot appeals most to diners comfortable with interactive meals who appreciate quality meats and seafood paired with customizable sauces and broths. It fits comfortably into Seattle’s growing Asian dining scene, providing a reliable, no-fuss setting to enjoy a satisfying hot pot experience without leaving the city center.

This is, hands down, one of the best hot pot restaurants I have ever visited. The food quality is simply superb and so incredibly tasty. We ordered the beef combo and several other delicious additions—every single item was high-quality and remarkably fresh. What truly elevated the evening was our waiter, Noah. He was absolutely awesome, striking the perfect balance between being engaging and exceptionally attentive. We can't wait to make our next reservation and come back soon!

Probably the best hot pot I’ve had in Seattle! The spicy broth is rich, flavorful, and aromatic — just the right kind of heat that keeps you coming back for more. They also offer a great variety of other soup bases if you’re not into spicy food. All the ingredients are super fresh, and the selection is huge — from meats and seafood to veggies and noodles. Definitely a must-try for hot pot lovers

We just had a really great late lunch at Qiao Lin Hotpot. All of the meat and vegetables were fresh and the golden chicken broth really satisfied. The space is beautiful with large booths made for double dates and business meetings. Definitely a spot we'll return to during the rainy months. Its a little more expensive than we care to spend on a regular basis but perfect for a nicer date night.

Great hot pot experience overall! We ordered the dual-flavor (yuan yang) pot — one side was rich and flavorful with a nice level of spice, while the other was lighter and creamy, which balanced everything out perfectly. The quality of the beef was excellent: beautifully marbled, thinly sliced, and very tender after just a few seconds in the broth. Presentation was also very nice and thoughtful. The restaurant was clean and bright, with comfortable seating and enough space at the table. Service was attentive — staff refilled the broth and cleared plates promptly. A great spot for gathering with friends or family. Would definitely come back again!

The staff were welcoming, the golden chicken broth was delectable and the desserts are not too sweet. It’s a bit pricey but worth it. 7/21/25 Went again, still worth it. 10/6/25 I had the lunch deal with angus beef which came out to a total of $33.31 with tip. I like this one as you get a little bit of everything and the meat is so good.

Absolutely love going to this place. It's very convenient being it's right across the street from a movie theater so it's a great place to stop before or after. The broths are very flavorful. My personal favorite is the pork tripe broth. Loaded with flavor, nice and rich. Perfect on a chilly day!

We get hotpot often but this place really exceeded our expectations! Generous portions, delicious broth flavors and exceptional staff! Will be back soon. Loved the selections at the DIY sauce station and really great drink options. Don’t forget the mango sago for desserts!
